Cold Weather Recipes

I am back for Blogmas Day 20… In January…. My explanation for that is that I have a super busy work schedule and mental health is an important thing. The rest should explain itself. I know that Christmas has passed, but I will be sure to make up all of the days, however, even if it means making multiple posts in one day. So here we go! I love trying new recipes for soups, chili, etc. each year during the winter months. I found two really great ones and want to share them with y’all!

Broccoli Cheddar Soup from here

You will need:

2 tbsp. butter

1/8 cup diced white onion

½ tsp minced garlic

2 cups chicken broth

Salt and pepper (to taste)

1 cup bite-sized pieces of broccoli

1 tbsp. cream cheese

¼ cup heavy whipping cream

1 cup shredded cheddar cheese

Bacon bits

In a large pot, sauté the onion and garlic with the butter over medium heat. Cook until the onions are soft and clear.

Add in the chicken broth and broccoli and cook until the broccoli is tender. Add in salt and pepper.

Put the cream cheese in a small bowl and microwave for ~30 seconds, then add to the pot. Add in the heavy whipping cream and stir until combined.

Turn off the stove and add in the cheddar cheese. Stir the entire time until it is completely combined.

Serve with bacon bits on top & enjoy!

My family loved this recipe! It will definitely become one of our go-to meals!

Slow Cooker Cream Cheese Chicken Chili from here

You will need:

2 chicken breasts

1 (15 oz.) can of black beans (drained & rinsed)

1 (15 oz.) can of corn

1 (14 oz.) can of diced tomatoes

1 hidden valley ranch dressing mix

1 tsp cumin

1 tbsp. chili powder

1 tsp onion powder

8 oz. light cream cheese (cut into chunks)

Put the chicken on the bottom of the slow cooker. Add all of the canned vegetables on top.

Then add the seasonings and the ranch mix.

Stir it all together and then place the cream cheese chunks on top.

Put the lid on and cook on low for 6-8 hours.

Use a fork to shred the chicken once it is done. Stir everything all together until it is nicely combined and cook for another 30 minutes.


This. Was. Amazing. I ate mine with some Club crackers and it just made it that much more delicious! I HIGHLY recommend this recipe.
