White Chocolate Blueberry Cupcakes

I recently got back in the kitchen and decided to make some yummy cupcakes! I got the recipe from this cookbook. I took them to work the next day and my coworkers LOVED them! Some of them were even begging me to make more!

You Will Need:

2 ½ cups cake flour

1 ¾ cups granulated sugar + ½ tsp

1 ¼ tsp baking powder

¾ tsp salt

¼ tsp baking soda

1 ¼ sticks of salted butter (melted & cooled) + 2 sticks (softened)

5 egg yolks

1 cup buttermilk

3 tbsp vegetable oil

1 tsp vanilla extract

3 egg whites

6 oz white chocolate (for melting)

½ cup blueberries (plus extra for garnish)

1 tsp freshly squeezed lemon juice

2 cups powdered sugar

3 tbsp heavy cream

Cupcake liners

Preheat the oven to 350°F. Line your cupcake tin with cupcake liners.

In a medium bowl, combine the flour, baking powder, salt, baking soda, and 1 ½ cups of sugar.

In a separate large bowl, whip 1 ¼ sticks of melted butter, egg yolks, buttermilk, vegetable oil, and vanilla with a hand mixer until fully combined. Make sure it has good volume to it.

Fold the dry ingredients into the wet mixture until fully combined.

In a separate small bowl, use the hand mixer and whip the egg whites and ¼ cup of sugar until stiff peaks form.

Fold a large dollop of the meringue into your batter mixture, then add the rest and fold it all together. This should make your batter a little more light.

Fill the cupcake liners with batter almost to the top. Bake until they are pale gold, about 20 minutes. Let cupcakes cool completely.

For the icing, melt the chocolate and let it cool. Blend together the blueberries, lemon juice, and ½ tsp of granulated sugar until fully mixed.

In a separate bowl, cream the powdered sugar and 2 sticks of butter together until fluffy. Add the cooled chocolate and continue mixing until fully creamed together. Add the heavy cream and beat for about another minute. Add the blueberry mixture and beat just enough to combine everything.

Frost the cupcakes how you please, and top with fresh blueberries!
