Cold Weather Recipes

There’s nothing better than a nice, warm soup when it is chilly out. My aunt and my mom have some of the BEST cold weather recipes and I figured I would share them with y’all.

Aunt Susan’s Vegetable Soup

  • Cooked Hamburger Meat
  • Corn
  • Field Peas
  • Green Beans
  • Diced Potatoes
  • Green Lima Beans
  • V8 Juice

– Let the soup simmer for a while, really just until everything is cooked through.

Mom’s Chili

  • Carroll Shelby’s Original Texas Brand Chili Kit
  • 2 lbs. Cooked Ground Beef
  • 1 (8 oz.) Can Diced Tomatoes
  • 2 Cups of Water
  • Salt (to taste)
  • 1 Onion, Diced
  • 2 Cans of Kidney Beans
  • 2 Cans of Pinto Beans

-Add all ingredients together. Cover and simmer for about 15 minutes. Serve and top with shredded cheese and sour cream, if desired.

Mom’s Potato Soup

  • 6 Large Potatoes
  • 1 Onion, Diced
  • 4 (14 0z.) Cans of Chicken Broth
  • 2 Cups Water
  • Celery Salt (to taste)
  • Pepper (to taste)
  • 1 Dash of Basil
  • 1 Dash of Sugar
  • 2 Sticks of Salted Butter
  • ¾ Cup Flour
  • 1 ½ Cups Heavy Cream
  • 6 Pieces of Cooked Bacon, Chopped
  • 2 Cups Shredded Monterrey Jack/Cheddar Cheese Blend
  • Chopped Chives

-Boil the potatoes, peel them, and then set them aside. In a large soup pot, melt the butter over low to medium heat. Add the onion and cook until softened. Add the flour and stir while cooking for about 3 minutes. Slowly add the chicken broth, water, celery salt, pepper, basil, and sugar. Bring to a boil, stirring often with a whisk. Gradually add the heavy cream until the right consistency has been reached. Chop the potatoes into bite-sized cubes and add to the soup. Simmer for around 5 minutes. Your soup is now ready! Garnish your bowl with bacon, cheese, and chives, if you desire.

I would highly recommend all of these recipes. They are delicious all-year round, but especially delicious when it’s cold outside.
